Farro

Q: What is farro? Where can I buy it?

Lynne:Farro is an ancient strain of wheat; in fact, it's one of the three "mother" wheats from which all other wheats have come. It is used in northern and central Italy and in other parts of the Mediterranean. I like farro for its delicate nuttiness, its protein, and how good it is in soups and other dishes. You can sauce it just as you would pasta. I've gone on about it's origins and how to use it in my new book, The Italian Country Table. It's very much a part of country cooking in Italy. Find it in specialty food stores. The Manicaretti people import it under the Rusticella brand and it's one of my favorites.
