Ireland: Ballymaloe Cookery School's Darina Allen offers one day, five days and weekend courses with cottage housing. In addition to theme courses and courses for professionals, the school, located in County Cork, offers a "forgotten skills" class that covers raising chickens, keeping bees, and smoking meat and fish. Japan: Elizabeth Andoh's Taste of Culture offers courses ranging from half-day to several days. Neighborhood market tours are included, but housing is not. Turkey: Culinary historian Kathleen O'Neill offers culinary cruises focusing on Turkish and Ottoman cuisine, including traditional Turkish foodways, dining with locals, and classes with home cooks. Vermont and Umbria: Deborah Krasner's own school offers eight five-day programs a year (four in Vermont and four in Italy's Umbria region.) Emphasis is on seasonal foodstuffs and visits with local home cooks, farmers, artisanal cheese producers and craftsmen.
