This week's show could be called the cookbook lover's version of The Antiques Road Show. Our guide is Jose Andres, award-winning chef and host of PBS's Made in Spain. He'll explain why his collection of antique cookbooks is so essential to his work. It's skirted cheeseburgers at the Squeeze Inn in Sacramento for Jane and Michael Stern. Russian food authority Anya Von Bremzen joins us for a look at the sizzling hot Moscow food scene. Anya is the author of Please to the Table: The Russian Cookbook. Dr. John La Puma, author of Chef MD's Big Book of Culinary Medicine, reveals one simple change we all can make for better health. And we check in with one of the locavores participating in our Locavore Nation Project.
Eat these like candy; they are that good. Fry up a batch, enjoy them fresh, then do more. You want male flowers which have stems. Females are attached to the squash. Harvest flowers once they have just opened and use them as soon as possible. Ask for flowers at farmers' markets and in specialty food shops. Do be sure the blossoms are from zucchini as other squash flowers often have strong, unpleasant flavors.

The thing to eat at the Squeeze Inn is the "skirted" cheeseburger. A 1/3-pound, hand-formed patty of good beef is grilled and topped with a mound of shredded Cheddar cheese. As the cheese melts, shreds run over the edge of the burger, hit the grill, and become chewy, crunchy bits that are then scooped back onto the burger. Those crispy bits are pure joy to nibble before you bite into the burger. The usual condiments are available along with excellent fries and milk shakes. You could order a regular hamburger here if you want, but that would be foolish.
