Korean Marinade for Pul Ko Gi or Kal Bi

Excerpted from Food Lover's Guide to Honolulu by Joan Namkoong (Bess Press, Inc., 2006)

This marinade is excellent for thin-sliced beef, beef short ribs or chicken, all of which should be cooked on a grill. For a terrific salad, add chili pepper flakes and dress torn romaine lettuce. Prepare this sauce, let the flavors blend for an hour, and then strain it and use it to season fresh ahi for poke. This is a great sauce.

  • 1 cup soy sauce
  • 1/3 cup water
  • 1 tablespoon minced garlic, about 3 to 4 cloves
  • 2 teaspoons minced ginger
  • 1/2 cup chopped green onions
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons toasted sesame seeds, ground

Combine all ingredients. Makes 1-1/2 cups. Store covered in refrigerator.
