Grilled Autumn Glazed Pork Steaks

from Lynne's Sunday Suppers, October 2000

Serves 4 to 6

Grill the steaks on an outdoor grill, on an electric counter top grill, or in a gridded skillet on top of the stove. If possible, use real maple syrup instead of maple-flavored syrup.

  • about 2 pounds pork steaks (from shoulder or butt if possible), cut 1-inch thick and trimmed of excess fat
  • 5 tablespoons maple syrup
  • 3 tablespoons cider vinegar
  • 5 large cloves garlic
  • 1/2 teaspoon fresh-ground black pepper
  • salt to taste

1. Spread the pork steaks on a large platter. In a blender or food processor puree together maple syrup, cider vinegar, garlic, and pepper. Pour over the steaks, turn them to coat with the mixture. The steaks can wait in the refrigerator for a couple of hours if necessary.

2. Sear the steaks on both sides over high heat, sprinkling them with salt. Then cook them over medium heat about 5 minutes per side, or until they are firm when pressed with your finger. Serve hot.
