Green Teas
by Bill Waddington
February 27, 1999
Green teas are almost completely unoxidized so they have gentler flavors, a lighter color and, when properly brewed, less caffeine.
To brew green tea leaves, steep for 1 to 3 minutes in water that has been heated to 170-185 degrees. The tea leaves can be brewed multiple times.
Lynne tasted two varieties of green tea on the show:
Gunpowder Temple of Heaven: The highest grade of Gunpowder tea has a slightly smoky character.
Precious Eyebrows: A wonderful introduction tea, this variety is mellow with a sweet plum aftertaste.
