A Local Favorite - Burgoo

If you're lucky enough to be in Kentucky for the Derby , it will be hard to miss the local specialty - Burgoo, the quintessential party food. Burgoo is virtually impossible to make for a small group . It's cooked in big cauldrons outside an open fire. Originally a bird-and-critter stew from the Civil War days, these days it's made mostly with chicken and mutton. Now, just in case you miss the Kentucky Derby there is a place called George's BBQ in Owensboro, Kentucky, that makes the stew year-round . George's Burgoo is thick with shreds of smoky mutton, vegetables, and an explosive dose of spice.
