Jane and Michael say the Laurel Diner in Southbury, Connecticut, is all about Zen and the art of perfect corned beef hash. They prepare the corned beef to be used only in their hash and it’s incredibly tender, crispy, perfect. The Laurel is attached to a service station so people leave their cars for a tune-up then head to the diner to eat. The hash is the thing here, but the boiled dinners and chicken pot pies are worth a try.
