Casmalia is true cowboy country and the Hitching Post is one of a handful of businesses on the main street of this little town light-years away from the ritz and glitz of Los Angeles. The tri-tip steak is the thing to have here. The meat is basted with a wine vinegar and oil marinade as it cooks over a hard oak wood fire. The steak is part of the traditional Santa Maria-style barbecue dinner that includes a relish tray, a cocktail of minuscule shrimp in red sauce, garlic French bread, salsa, and baked potato.
