Native Bukharan Cuisine

One of the recent developments in the world of Jewish food in this country is the native cuisine brought here by Jewish immigrants from Central Asia’s ancient land known as Bukhara. With the breakup of the Soviet Union in the early 1990s, thousands of Bukharan Jews fled to the United States with the majority settling in New York City primarily in the Queens neighborhoods of Forest Hills, Kew Gardens, and Rego Park. Matthew Goodman, author of the Food Maven column for The Forward, particularly likes the food at Salut, a kosher restaurant in Rego Park.
