Chef Rebecca Charles could be credited with bringing the lobster roll to Manhattan. There were none to be found when she opened her restaurant in 1997. Along with New England clam chowder, fried oyster rolls, little neck clams, salt-crusted shrimp and Prince Edward Island mussels, Pearl Oyster Bar is akin to coastal Maine in Greenwich Village.
