Seattle’s renowned Chef Tom Douglas has been instrumental in defining Northwest or "Pacific Rim Cuisine" as it is often called. Given the Pacific Northwest’s proximity to California, Canada, Alaska and Asia, its cuisine is influenced by many cultures but always features the freshest and best ingredients the region has to offer.
In 1989 Chef Douglas started the Dahlia Lounge which became one of the Northwest’s premier restaurants and earned him the James Beard Association Award for Best Northwest Chef in 1994.
Etta’s Seafood followed in 1995 to early critical acclaim and provided a showcase for Chef Douglas’s unique cooking style utilizing the best seafood available. Etta’s is now a Seattle dining landmark.
In 1996 came the Palace Kitchen, offering a more rustic style menu featuring rotisserie specials from the wood-fired grill. The same year Douglas was again honored by the James Beard Association when the Palace Kitchen was nominated as one of the country’s best new restaurants.
We asked Chef Douglas where he likes to eat when he’s not in his own kitchens. His favorites include Wild Ginger, Pho Bac for noodle soups, Rover’s for high-end French and Saigon, his favorite spot in the Pike Place Market.
