Japanese Nouvelle at Taka
October 7, 2000
On a recent trip to San Diego Lynne discovered Taka, a restaurant featuring reasonably priced Japanese nouvelle cuisine and good service. Located downtown in the Gaslamp Quarter, Taka looks like a lot of trendy new restaurants these days with its sleek lines, pale woods and architectural furniture. Sit at the sushi bar where the wasabi horseradish paste and pickled ginger are set out on a huge banana leaf, or take a table nearby so you can sample both the sushi and items from the main menu.
Lynne says skip the predictable entrees and go for the more interesting appetizers, soups and sushi. Start with small bowls of the two soups: grain-based miso with aromas and flavors of smoky pine, and the delicately flavored and transparent dashi. From the sushi menu go for the fresh, briny and delicate clam and seaweed salad or the salmon skin roll, grilled until crusty then rolled in vinegary-sweet sushi rice. These small dishes are still enough for two or three people to share.
