Andina Restaurant
December 10, 2005
Listen to this feature (How to listen)
The Oregonian newspaper named Andina restaurant of the year for 2005. The serious Peruvian food served here is a collaboration between Executive chef Jose Luis de Cossio and co-owner Doris Platt Rodriguez, both natives of Peru. Their inspiration comes from the culinary traditions of the Andes Mountains, along with Novo Peruvian dishes that marry modern techniques with native ingredients.
Sommelier Ken Collura has compiled an interesting wine list with South American selections from Argentina and Chile along with bottles from Europe and the Pacific Northwest.
The adjoining Bar Mestizo continues the theme with a wide variety of tapas, a raw bar, and live music with a Latin beat. An unusual feature is the jamon cart featuring the traditional butifarras, cooked ham sliced tableside and served on house-baked quinoa rolls.
For background information about native Peruvian cuisine, Peru's wealth of foodstuffs, and traditional preparations the folks at Andina recommend two book: The Art of Peruvian Cuisine by Tony Custer (Ediciones Ganesha, 2003), and The Lost Crops of the Incas: Little-Known Plants of the Andes with Promise for Worldwide Cultivation by the National Research Council (Books for Business, 2005). Check local bookstores or online.
