Run by the ebullient Minguella brothers, Miramar at first might seem a little touristy and down at the heels. Never mind: The bouillabaisse is the real deal, so intense it's almost pornographic.

The bouillabaisse at Michel is the most elegant and pristine in town, and the expertly filleted fish simply doesn't come any fresher. Ignore the weird mâitre d' (the one in a sailor's shirt).
L'Escale

L'Escale offers the best overall experience: great fish, perfectly balanced broth, delicious rouille, all served up with glorious Mediterranean vistas. Well worth the cab ride out to the village of Les Goudes.
