Bouillabaisse in Marseille
September 7, 2002

Anya Von Bremsen, who writes for Travel & Leisure magazine, eats all over the world and knows just where to find the best examples of local dishes. For bouillabaisse in Marseille, here are her best bets:

Miramar
12 quai du Port
Tel: 04-91-91-10-40)

Run by the ebullient Minguella brothers, Miramar at first might seem a little touristy and down at the heels. Never mind: The bouillabaisse is the real deal, so intense it's almost pornographic.

Michel
6 rue des Catalans
Tel: 04-91-52-64-22

The bouillabaisse at Michel is the most elegant and pristine in town, and the expertly filleted fish simply doesn't come any fresher. Ignore the weird mâitre d' (the one in a sailor's shirt).

L'Escale
2 boulevard Alexandre-Delabre
Les Goudes
Tel: 04-91-73-16-78

L'Escale offers the best overall experience: great fish, perfectly balanced broth, delicious rouille, all served up with glorious Mediterranean vistas. Well worth the cab ride out to the village of Les Goudes.
